I'm hoping to get an assortment of cuts to have on hand for a variety of experiences. I called today and although they have a stall at the Landsdowne market, they only have sausages, cured meats and a couple of standard cuts there. I'm going to go visit the ranch next week and pick up hanger steak, the striploin, osso bucco, bones, and something else for braising. Any other cut suggestions?
