Im going home Donny Posted June 4, 2013 Report Share Posted June 4, 2013 (edited) Okay..I threw this together yesterday and realy it was thrown together so I can't give exacts but it's soup..exacts not tottally neccesary. Fully reccomend giving this one a shot! About 5 big ass potatoes peeled and cut into small squares. 1 huge sweet potat same as above. About 6 big carrots, peeled and chopped into bitable bits. 1 zuchinni not peeled and chopped same as above. 1 red bell pepper chopped same as above. about a cup of caulifower chopped. about a half cup broc same as above. 1/2 cup dried mixed soup mix(it had lentils, a few dif' beans and peas about 6 super mini(like smaller than cherry tomatos) red onions chopped/diced 1 apple, peeled and chopped 1/2 can chic peas about 2 cups super chopped n' diced baby Kale 2 veggie soup cubes 1 garlic clove diced a tiny bit of sea salt a bunch of pepper 2 Bay leaves about a tablespoon of corriander about a tablespoon of diced ginger 1/2 can of coconut milk In a big pot I boiled the potats, carrots, cauliflower, broc and dried soup mix long enough to soften the dried soup mix. When I do it again I might soak the mix overnight first or put them in the boiling water first. In a frying pan I sauteed the onions, garlic, bell pepper in oil then mixed all that into the soup pot and added everything else. I pureed about half of the soup, making sure to puree all the apple bits. Then poured the puree back into the soup pot...maybe it was a bit more than half. Don't forget to fish the Bay leaves out before puree action. I have begun writing down how many Bay leaves I put in..not a bad idea if you have a gazillion things on the go. OHMYGWD...Amazeball soup.
