\/\/illy
I've prepared duck many times now but I'm still not certain on how to 'cut across the grain' when I'm cutting it up before serving. Any pointers? Pictures would be REALLY helpful.

Ms.Huxtable
If you're talking about the breast Willy (and if we say breast enough times this topic may be allowed to stay in the Cavern ) then it's cutting the width, not the length. If you get short pieces it's against the grain. Did I just tell you something you already know? Sorry if I'm condesending the master chef.

And, for the record, I believe that it is you that is the master chef. Although, I'm expecting good things from my grilled duck breast with pinot noir and cranberry reduction and a wild rice risotto. Yum.

bradm
I'm numb.I dont know if that is how I would express what I am feeling.I'd normally advocate getting in touch with your feelings, but I cringe to think what that might actually mean in this case...Aloha,Brad Edited October 12, 2007 by Guest
