Cutting Duck 'Against the Grain'

If you're talking about the breast Willy (and if we say breast enough times this topic may be allowed to stay in the Cavern ;) ) then it's cutting the width, not the length. If you get short pieces it's against the grain.

Did I just tell you something you already know? Sorry if I'm condesending the master chef.

Thanks; that's exactly what I was asking! And, for the record, I believe that it is you that is the master chef. Although, I'm expecting good things from my grilled duck breast with pinot noir and cranberry reduction and a wild rice risotto. Yum.
