i am very picky with the simplicity of my egg salad:

- MUST be miracle whip, not mayo

- eggs grated with a cheese grater

- pepper

- pinch of curry. my grandma gave me that tip, it really does make for some egg salad magic.

- squishy cheap white bread is the preferable mode of delivery. the best is that wonder bread made specifically for sandwiches that is perfectly square. yum!

oh hell yeah dude, an absolute must... and you'd be surprised at how much it can take withuout you ever noticing a mustardy taste. first time i put some in, i added maybe 1/4 teaspoon, now it's probably a full heaping teaspoon (4 eggs)

Second the mustard recommendation. Make it good mustard though like original French's and any of their specialty mustards that are a little spicy. Screw the no-name crap.

Original French's simply can not be defined as good mustard. Sorry.

As store-bought mustards go that aren't sissy off-shoots like dijon etc..., I'll take French's every time.

Exactly, and on hotdogs and hamburgers. Ever had Hunts or No-name mustard on any of the above? Flavoured mayo, I tell you whut.

Here's my ideal egg salad - keep it simple.

Eggs

Hellmans Mayo

Dry yellow mustard (powder)

Chives or finely chopped green onions

Chopped Bacon (real bacon kids, leave the synthetic bits in the store for the trailor folk)

salt, pepper

And yes, I like dill pickle in my egg salad but I like it even more in my tuna salad. I can eat egg salad without pickle, but I wouldn't dream of making tuna salad without it.
