fluffhead77
So Jaybone, myself and a few other fellows are having a beer and oyster night and I wanted to make up a few sauces to go with - anyone have any suggestions? So far I have the classic mignonette, fresh horseradish and lemon and a chipotle, lime and honey sauce.

M.O.B.E
Its one of the traditional sauces served with Oysters. I like it strait up but you can add pretty much whatever flavour you like after you have the sauce made so long as you add it in gently and keep the temperatures the same so it doesnt split. jaybone
We are going to eat the shit out of a ton of oysters!!!I think there will be roughly 12 of us there and over 400 oysters!I am psyched. For future reference, I have tried these recipes a few years ago (I was the guest, so I haven't made them myself). http://www.epicurious.com/recipes/food/views/Oysters-with-Nobus-Three-Salsas-105871They were pretty awesome when I had them last. We'll give'em a shot this weekend and report back. Can anyone recommend some beverages to accompany this feast? I know champagne, sauv. blanc, and unoaked chardonnays are classics. I'm sure we'll be experimenting with some beers as well.Does anyone know any cheap(ish) champagne or cava's that they would recommend?

SaggyBalls
I read somewhere that oysters are among the shellfish that are both good for the environment (they filter water) and easy to farm.Way to not have a tuna party, guys!
