Guest Low Roller Posted April 27, 2006 Report Share Posted April 27, 2006 Ingredients:1 Eggplant1 Medium onion, diced5-6 Mushrooms, sliced1/2 Orange pepper, sliced1-2 EggsFreshly chopped coriandersalt & pepper1- Place eggplant in oven for about 20 minutes2- Fry up onion on frying pan until golden (medium heat)3- add orange peppers and mushrooms4- add salt and pepper5- Remove eggplant. Skin and cut into cubes. Add to pan6- Add freshly chopped coriander.7- Allow to simmer for about 5-10 minutes8- Mix in one or two eggs until desired consistency is attained.Preperation time: 35 minutesServes 1-2 Link to comment Share on other sites More sharing options...
