Ms.Huxtable Posted January 17, 2009 Report Share Posted January 17, 2009 This one's for fellow soup lover, AD.I made Gordon Ramsey's Roast Chestnut, Parsnip and Apple Soup tonight and it's not only easy and fast but also VERY tasty. (Although there was a challenge finding chestnuts today).butter2 stalks celery, chopped2 apples, peeled, cored and chopped250g roasted chestnuts, roughly chopped600 ml chicken or veggie stockcream to serveparsley (I added this, it's not in his recipe)Salt and pepper to tasteMelt some butter in a saute or sauce pan. Add parsnips and celery and cook on med-high 5-7 minutes until they start to colour.Add apples and continue cooking about 5 minutes until apples are soft. Add chestnuts and stock and cook another 5-10 minutes.Puree with a hand blender until smooth. Adjust consistency to the thickness you want with hot water or more stock and season to taste.Serve with a swirl of cream and some freshly chopped parsley.Enjoy.
