Tastey,Healthy, Carrot muffins

These can be easily veganafied for your freaky vegan friends too.

- 1 tbsp Baking powder.

- 1/2 tsp Ground cinnamon.

- 1/4 tsp all spice(nutmeg, ground ginger,cloves). I use nearly a full teaspoon and fresh ginger and freshly ground cloves)If you're not a ginger freak I'd say go with the 1/4 Tsp.

- 1/2 cup grated carrots. (I super chop the carrots after grating but that's just to trick one of our kids into eating carrots)

- 1/2 cup dark chocolate chips.

- 1/2 cup chopped walnuts

- 1/2 cup honey

- 1/4 cup olive oil.

- 1 egg or for Vegan replace with 1 tbsp cornstarch & 3 tbsp water(google to check ratios but I'm pretty sure that's right)

- 1/2 cup rice milk

- 1 1/2 cups rice or your choice of flour. I think I remember the rice flour making them a bit dry. The batch I just made was just whole wheat flour. Maybe a mix would be good.

Preheat oven to 375F

- In a seperate bowl, cream together honey & olive oil, whisk in egg or replacer mix & milk untill well blended.

- In another bowl sift together flour, baking powder & spices.

- Add wet ingredients to dry all at once, then carrots, nuts, chocolate chips.

- Stir until moistened.

- Spoon into greased muffin pan(use olive or coconut oil or something vegany for vegans)

- Bake for 20 minutes or untill tops are firm to the touch.
