M.O.B.E Posted March 27, 2006 Report Share Posted March 27, 2006 while I was on the fish topic I thought I'd share my favourite recipe for Mahi Mahi. I'll write it for 2 people. Double the recipe if you are making more. I serve this normally with plain rice or rice and beans(recipe also included), but a baked sweet potatoe {depending on the size this takes approx. 45-60 minutes at 450F} is also nice. This recipe is high protein and very low fat. If you can't get mahi mahi this also works very well with Tilapia or Halibut or any other firm flesh white fish.Mahi Mahi with Orange Butter2 6-8 oz portions of Mahi Mahi1/4 trail mixSalt & pepper to taste.Grape Seed Oil or other neutral oil.1. grind or chop your trail mix finely, place everything into a ziplock bag with 2tbsp of Oil. ( just makes it easier to coat the fish)2. lightly flour a baking and place fish on it3. bake in preheated oven for 10-12 minutes at 425FWhile this is cooking it only take a minute to make orange butter.you will need.1 orange**1//4 cup of butter 1. juice the orange and some of the zest(for a real punch) into a sauce pan and over med heat reduce the juice. 2. When you have reached a nice reduction wisk the butter in and remove from the heat. Drizzle over your fish when finished.** 1 cup of orange juice will also work but the taste wont be quite the same as if you juice a fresh orange. for simple rice and beans...1 cup of white or brown rice (any kind will do)1 small can of kidney beans (black eyed peas work too if you prefer)1 small diced onion2 tsp diced ginger1 tsp garlic1 tsp AllspiceS&P To Taste1. steam your rice, you can do this well in advance if you like.2. saute onion, garlic, ginger, kidney beans3.
