What to do with this alien like beast?

Peel it and eat it. It's good when slivered and served raw in salads. I've used it in kohlrabi and apple salad with mustard dressing and also with pea shoots and sesame dressing; both were tasty.

make mashed potatoes with it. seriously. treat it like a potato. we made our standard garlic smashed up potatoes using that beast and it was delicious. You could mix in some potatoes as well. half and half.
