jaybone
I usually just use whatever white fish is on sale and fresh. Cod, sole, grouper- I'm not fond of tilapia as I find it "dirty" tasting.I give it a cajun seasoning and pan sear it and finish with a lemon squeeze. Throw it on a taco and add toppings. I do like to add some fresh herbs to brighten the flavour- cilantro is a fav, but Erin hates it so I often just add Italian parsley.
