  1. Cooking a whole chicken instead of just breast saves $

    Jambalaya recipes are versatile.

    Sandwiches and sweet potato fries or wedges fries are a great meal. (we make avocado club with tomato, red pepper, lettuce, cheese and spicy mayo)

    Chick pea curry with rice and veggies.

    Dinner salads with veggies, avocado, broken up tortilla chips and dressing.... can add chicken, bacon

  2. Huxley was a chow. We found him on a busy street, in traffic tonight at 9pm. He was very weak and his hind legs weren't supporting him.

    I took him out of traffic and tore off a rope from my skirt, wrapped it around his neck and tried to pull him to my vet. I carried him part of the way. The vet was closed so Brendan called his mom and she called the vet at home.

    As we waited, Huxley leaned against me as I tried to give him some water. I pet him, I could feel every vertebrae, every rib, inside his rib cage, the outline of every bone in his hips. He was so gentle and so trusting.

    The vet showed up and said that he was about 8 years old, and either hit by a car a long time ago, or inflicted with a disease from ticks or fleas. He might live another year with lots of meds and love.

    We just couldn't take him in, and I decided that he was to be euthanized.

    I held him while he was given a sedative, he was so malnourished it was very hard to find a vein. I pet him while the IV was inserted, he took his last breath. I felt his last exhale, his heart stop.

    I cried thinking about how long he suffered and prayed to any god that he was not hungry his whole life, that he felt some love.

    I gave him his name, Huxley, minutes before he died.

    Please hug your pet for Huxley tonight.

    My heart is broken.

  3. Finding Veggie gravy is hard

    I find the idea of veggie gravy horrifying. :)

    If I was leaving Mexico, I think my last meal would be seafood. Not a big seafood person generally, but in Mexico it has always been so fresh and tasty. Oh! Breaded red snapper. (Not that I could eat that, because of the 'breaded' bit, but I envy anyone who can. First time I ever tasted fish and thought it was yummy was red snapper in Puerto Viarta. Yeah, yeah. Tourist trap. I know.)

    Really? I always found powdered meat gravy really scary. I guess it's mostly sodium and starch either way.

    PV is a fishing town, so buying fish on the beach is far from a tourist trap, they were doing that way before we got here.

    Edit to add: On bank at slater, they make good falafel...Shawarma Laguna I think, really nice owner.

  4. You're coming home? When? For how long? What's your last meal in Mexico going to be?

    CEASARS! I miss those so much!

    We are coming home at the end of the month and sadly missing bluesfest. Will be home for 2-3 weeks. I just got a job starting August 17th so we are trying to extend our tickets to see everyone. Will you be in Vietnam then?

    My last meal in Mexico will probably be at home, a salad I make with local ingredients that I eat everyday (we have an amazing market near here). OR my favorite taco place, they grill the tortilla shell until crispy, add some cheese and load it up with fried peppers, onions and mushrooms...their assorted hot sauces are amazing. Everyone that visits ends up loving this place. I guess more like a tostada

  5. When you leave a country you live(d) in, What has been your last meal? or What would it be? Foods that you know you wont have for a long time.

    Poutine is always big on my list when I leave Canada, deciding where to go is the hard part. I love Quebec's Casse-Croutes. Finding Veggie gravy is hard.

    In Korea it was galbi, I still dream of it sometimes even though I haven't eaten meat since then, maybe that's why. I loved the time with friends and the time it took to eat.

    And looking forward to a really good breakfast out.

    (I am already thinking about what I want to eat when I get home...)

    I have seen organic meats at Herb and Spice. Mostly frozen though. If you call them, they can probably give you places to check out.

  7. I used to make a variation of this...No romano, but I would add some fresh moz., tomato slice and fresh basil after it was cooked.

    ASPARAGUS WRAPPED IN PROSCIUTTO

    24 to 36 fresh asparagus stalks, trimmed

    6 slices prosciutto

    1/2 c. freshly grated Romano cheese

    1/2 c. melted butter

    Freshly ground pepper to taste

    Preheat oven to 350 degrees. Steam asparagus for 5 minutes. Wrap 4 to 6 stalks in a slice of prosciutto, and repeat to make a total of 6 bundles. Place in a buttered shallow baking dish and sprinkle evenly with cheese. Drizzle butter over all and sprinkle with pepper. Bake for 8 to 10 minutes or until bundles are heated through and cheese is melted. If making them head, cover and chill. Bring to room temperature before baking. Serves 6.

  8. mint leaves, mashed into a glass

    white rum

    tbsp sugar (or to taste)

    soda

    lime juice and a bit of its rind

    Try changing the mint leaves for thin slices of ginger and follow same directions, if you are a ginger fan you'll thank me. :)
