Recommend some recording gear

I'm looking for a device that is relatively cheap ($500 and under) and easy enough to use for the average person wishing to record some tracks of half decent quality. It will be made available to community members looking to do some recording on the cheap or even free. I would really appreciate some advice from you'se guys. Thanks!

how many channels (2-channel stereo? 4-channel multi-track?)

Tascam, Sony, Edirol, Marantz and Zoom all have gear in that approximate range (say 500-700 tops) that might match your needs.
