ReDD Posted March 11, 2006 Report Share Posted March 11, 2006 This recipie forum was a great idea. I'm hoping someone may have some yummy veggie dishes my bf and I could try out. This soup I have been making for years. It's great on a night you don't feel like putting alot of effort into cooking, although it tastes like you did!!3 tbsp. butter1 lg. onion, sliced6 lg. ripe roma tomatoes, peeled and chopped1/2 c. fresh chopped basil3/4 tsp. sugar1/8 tsp. ground white pepper1 3/4 c. chicken broth1 c. macaroni noodles1/2 cup shreded chedder cheeseSalt to tasteIn large stock pot, melt butter and cook onion stirring frequently. Stir in tomatoes, basil, sugar, and white pepper. Bring to boil, stirring constantly. Reduce heat and simmer for 10 minutes covered. Stir in broth and salt. Heat to steaming. In another pot boil macaroni, strain and add to tomato mixture. Let simmer for 5 minutes. Serve in indivdual bowls and cover soup with cheese.
