roasting squash

How would you recommend roasting a butternut squash, with the least amount of effort? The result I want is a slightly caramelised soft squash inside that I can just scoop out, because cutting into a raw squash to cube it is something that seems a bit too labour intensive when I’m just going to be mashing it afterwards anyways….

Any tips? A co-worker said to just cut it in half, place each half on a baking sheet and roast for 45 minutes at 350……

I cook acorn squash that way: cut in half, scoop out the seeds, poke the flesh a bunch of times with a fork, and place cut-side down on a baking sheet in the over at 400 for 40 minutes or so, turning it over for the last 10 minutes or so (whether that makes a difference or not, I don't know).

Aloha,

Brad
