bradm
http://www.ehow.com/how_3263_buy-fish-sushi.htmlI'd also hope that, if you found a good fish market, the fish monger could give recommendations as to exactly which fish to buy.Aloha,Brad
AdamH
I've had luck (and NOT gotten food poisoning) with Fish from LaPointe's for Tuna, Toro (Salmon Belly) , smoked eel and different kinds of roe. At Kowloon you can get the generic red roe in a little container for cheap. Frozen fish, roe and Edamame are all available from the store next to Suisha Gardens. I'm pretty sure there are other suppliers such as the Pelican fish market near the Bank St. Farm Boy who may carry it but I've never investigated. Kowloon has an astounding selection of interesting fish but I don't know I'd want to eat it raw as their hygiene practices are....how you say...different. Have you guys checked out www.ottawafoodies.com? It's new, and while the interface is a bit confusing at first it is ideal for answering questions such as "where do I find XXX". AdamH
LaPointe's will not charge you for a piece of salmon skin by the way, if you want to make a salmon skin roll which happens to be one of my favorites.
AD
how much free salmon skin are we talking about here? enough for pants?
AdamH
I made a Jack Spade lookalike man purse with the amount they gave me. If you work in weights I'd say 3 kilos, if in dimensions I'd say 8 feet by 9 feet of salmon skin. All from the same fish. Rough workday over here!
