Grilled Chicken with Cajun Mayonnaise

Created by: Philippe Wettel, Westin Ottawa, 2001

Serves 6

- 1/2 cup (125 mL) Dijon mustard

- 1/2 cup (125 mL) orange juice concentrate

- 1/2 cup (125 mL) orange juice

- 1 tablespoon (15 mL) fresh, minced gingerroot

- 1 tablespoon (15 mL) Cajun spice blend

- 6 tablespoons (100 mL) mayonnaise

- Six 6-ounce (170-g) skinless, boneless chicken breasts

- 6 bread rolls, cut in half lengthwise

- Olive oil, for brushing

- 12 lettuce leaves

- 12 slices fresh tomato

1. In a food processor, mix the mustard, concentrated and ordinary orange juices with gingerroot and Cajun spice to make marinade.

2. Mix 4 tablespoons (65 mL) of the marinade with the mayonnaise to form a sauce.

3. Marinate the chicken in the remaining marinade from the food processor for 6 to 12 hours. (For convenience, it's easiest to enclose chicken with marinade in a resealable plastic freezer bag, refrigerated.)

4. Preheat barbecue on medium heat. Remove chicken from marinade (discard marinade) and grill breasts, with the barbecue lid closed, about 8 to 10 minutes on each side, or until juices run clear when meat is gently pressed with a finger.

5. Brush rolls lightly with olive oil, then spread rolls with Cajun mayonnaise. Add the lettuce leaf, tomato slice and chicken breast. Serve immediately.
