AdamH Posted March 31, 2008 Report Share Posted March 31, 2008 Parchment paper is a gift to those of you who like the oven roasted potato. it keeps things nice and dry and you can make very acceptable oven fries with it too. reba Posted April 11, 2008 Report Share Posted April 11, 2008 (edited) sauteed garlic, tons of olive oil & rosemary in a large frying pan. boiled potats added to the hot garlicy, rosemarried olive oil until they are coated in oil and yumminess. dump the whole mess into a large bowl with butter and mash by hand. add heavy cream or creme fraiche and salt and mash some more. these are our favorite potatoes. we have forgotten that there is any other way to make them.
