I'll take them any way I can get them, even pickled.The simplest way I prepare them is to wash them and boil them whole until you can pierce them with a fork. When they cool a bit, the skin will just slide right off. Chop them into cubes or slices and pan fry with butter, salt and pepper just to reheat and make them shiny. Mmmmm.Beet soup (borscht) is very good as well, hot or cold. I've never made it myself but always enjoy it.Here's a salad you might want to try as well:Endive Beet & Red Onion SaladIngredients:1/2 lb Raw Beets, trimmed 3 Heads of Belgian Endives, md 1 Red onion 1 T Dijon Mustard 1 T Red Wine Vinegar 3 T Vegetable oil 4 T Finely Chopped Parsley Instructions:Place the beets in a saucepan and add water to cover with salt. Bring to a boil until the beets are tender about 30 minutes. Drain and let cool. Remove the skins and slice the beets. Trim off the bottom of the endives and cut them into 1 1/2 inch strips. Drop the pieces into cold water. Drain and pat dry. Peel and slice the onion. Combine the mustard, vinegar, salt and pepper in a salad bowl. Add the oil and blend well with a wire whisk. They have a lovely sweetish flavour..! I like em with balsamic vinigar, olive oil and salt.
