bradm
I was grocery shopping today, and bought a boneless marlin steak, about 250g, a bit less than an inch thick. Does anyone have any tips or recipe ideas for how to cook it? My basic plan would be to season it with salt and pepper and fry it in a bit of vegetable oil (with diced onion and mixed veg) until the centre of it was almost done, but I'm interested in what other options there might be. I'll probably do some potatoes (cubed, boiled, then fried/browned) with it.Aloha,Brad
Blane
for dry-ish fish (marlin, shark, swordfish, etc.), I like to do them in foil packs with various combinations of spice and veg. I like it with chili sauce, a slice of tomato, lemon juice, a bit of chopped onion, garlic, S&P, and coriander.
bouche
poach it in some wine and herbs maybe? Without knowing, I would treat it as any whitefish. I think you might have fun making marlin tacos! http://fooddownunder.com/cgi-bin/recipe.cgi?r=159282 http://davesensei.blogspot.com/2009/05/marlin-tacos.html Doesn't this look good???
