I've never started a BBQ sauce straight from tomatoes...I usually cheat and start with plain ketchup....(the cheap stuff too) Then...depending on what I'm making it for.... Maple syrup, Molasses, Brown Sugar or Honey, for sweetness. One of my faves was a blueberry/maple syrup BBQ sauce. Mustard, apple cider, and apple cider vinegar staples. Smoky...go with the canned chipotles in the adobo. Chunky...sometimes I like to slice onions finely and sautee with garlic...add some tomato chunks. Boozy...Old Sam BBQ sauce was a fave....I think I did that one chunky style...Any dark rum works too Hmmmm, I'm excited now....I don't think I've ever written a sauce recipe down, it's always different, and all depends on what's in the fridge/pantry.
