Second the Cohen.

A lot of baroque music does it for me - Albinoni: Adagio, or Purcell: Dido's Lament (there's nothing like the last words of a distraught lover throwing herself on a funeral pyre).

Dr John's Creole Moon is still around the top of my list too.

Come to think of it, I could spend the rest of the day coming up with a big list, but it's too nice and sunny out....
