Ms.Huxtable Posted June 12, 2006 Report Share Posted June 12, 2006 Marco, When Mike and I are watching our carb intake, we like to cut it in half and bake it, then pull out the strands of squash with a fork like fluffhead suggested. After that, treat it like spagetti, serve it with your favorite tomato sauce or do it up aglio oilo style. It's not a bad carb subsitute. Another good carb substitute is cauliflower instead of mashed potatoes on sheppards pie, or shredded cauliflower, steamed and served as the rice with a saucy Indian or Thai dish.
