MarcO Posted July 27, 2006 Report Share Posted July 27, 2006 My limited experience tells me all the toppings should be cooked and hot before going onto the grilled dough. Basically, the hot pizza sauce, cheese and toppings go onto the pizza relatively last-minute so the cheese can melt and bring it all together.You can't use the bbq like an oven in this case because you'll torch the bread. c-towns Posted July 27, 2006 Report Share Posted July 27, 2006 use foccacia bread for the crust, turn on side of the bbq on medium, cook the pizza on the other side straight on the grill, turning periodically.For the sauce I like to mix any flavour of Diana's bbq sauce half and half with pizza sauce. ollie Posted July 30, 2006 Author Report Share Posted July 30, 2006 My grilled pizza was a resounding success! It was a lot easier than I imagined and I had the routine down pat by the time I cooked the second pie. The crust on the first one was overdone but it was still delicious. This is probably the greatest home made pizza I've ever made and easily rivals the pros for taste. And that's not bragging, it's just really, really simple. I pretty much followed the article I linked above (plus this one for the dough: Quick-and-Easy Pizza Crust Recipe). My biggest deviation was in the cooking time for the crust. The article suggests 5 to 10 minutes per side but that's too long. 3 to 5 minutes per side is a better guide. The trick is to watch the crust constantly and shift it around to avoid burn marks. And I kind of cheated in that I had to finish off the toppings under the oven broiler because I didn't want to burn the crust but you can probably cook it all on the bbq if you use less toppings. The sauce was just a can of tomato sauce with some fresh oregano, hot sauce and salt and pepper added. Basic but good. Toppings included mushrooms, red onions, green pepper, hot banana pepper, pepperoni and mozzarella cheese. Ok, pictures: The grill is heating up and toppings are ready for action. Just put the crust on the grill, the yellow stuff is cornmeal. Checking the underside of the crust and shifting it around. One side done! Toppings go on while he second side is cooking. Pizza topped in under a minute! Pizza just off the grill! You could probably eat it just like this but I wanted to brown the cheese under the broiler in the oven. After a minute or two under the hot lights. Served with a nice spinach salad! TRY THIS!! YOU WILL LOVE IT!!! Link to comment Share on other sites More sharing options...
