refried bean burritos

-refried beans warmed in a pan (maybe a little canola oil in the pan too)

-rice

-tomatoes (or salsa)

-shredded lettuce

-some type of thin flat bread for the wrap

-medium or hot sauce (like from taco bell, available at the supermarket... and taco bell)

(buy a couple of avacados, garlic and make guacamole)

(add sour cream or cheese if you like and you're not trying for vegan)

tasty, filling, quick and easy (will keep you going strong for weeks on tour)

TVP is a good suggestion, with flavouring

also try :

Tempeh - tasty meat replacement

more good veggie recipes

yet more good recipes (not all vegetarian but some good ones if you look around)

try buying some organic fruits and veggies... usually more expensive but healthier and tastier

MarcO's Bean Salad

2 cans mixed beans, rinsed

1 small red onion, diced

2 peppers (1 green, 1 red), diced

1/2 cup sliced green olives

1 garlic clove, minced

1 tbsp dried parsley

1 tsp dried oregano

the juice of at least one lemon

1/4 cup olive oil (you may want to adjust this according to how much lemon juice you use)

salt + pepper to taste

Mix it all up, let it sit for a bit, and enjoy the legume-y goodness! [big Grin] Goes nice with a big greasy sausage too.... [Eek!]
