Freak By Night
If they were nice and big and fresh, $26 is probably a fair price.

ollie
I tried a simple technique I saw on The F Word this week, slicing each scallop in half along the side. This made for a much higher crispy-to-tender ratio that I really liked. They take less time to cook this way too.I need to work on my sear though. I burnt one side a little bit, although it was easy to flake off.

Prost
When I make scallops I like to toast some sesame seeds and finely chop some chives. Mix them together and then roll the edges of the scallop in the seeds and chives then sear each side as you normally would. Mmmmmm
jaybone
For a nice sear on the scallop, make sure you dry them off before you put them in the pan.

fluffhead77
Got food poisoning in SF two weeks ago from some scallop sashimi - but got back on the horse this weekend and had it again. Boy howdy was it tough to eat though...The texture had my stomach in knots. Good thing the truffled cabbage chiffonade was there for some tasty texture...
