All I do is add a couple of tablespoons of red (well, they're actually orange) lentils (rinsed and drained) to the rice about 5 or 10 minutes before the rice is done. It adds legumes, completes the protein (neither lentils nor brown rice on its own is a complete protein), and adds a bit of nuttiness to the taste.
