I always feel like I'm cheating using a store bought kind, although I do tend to add to them.With the amount of tomatos we had last year I'm thinking that putting our own stamp on a sauce might be in order this yearI like the fact that there's a lot of give in these kinds of recipesThinkingtomatosbrown sugarapple cider vinegarlotsa pepper, just a bit of saltgarliconionchili seeds for heatbeer? SaggyBalls Posted March 26, 2010 Report Share Posted March 26, 2010 You may want to find a way to make a sauce without the tomato......even though that was a pretty big part of it.Gonna reduce, hydrate with beer or whiskey, reduce after you thoroughly brown your flavour base (garlic, onions/shallots, chilis/chipotles, (vinegar?))?When would you add in the bacon...or would you make the bacon in the pan and then go from there?Sweet mustard bourbon BBQ sauce is also a fave, but a distraction from this thread. d_rawk Posted March 27, 2010 Report Share Posted March 27, 2010 Haven't made BBQ sauce in years (getting lazy, I guess), but here is my recipe:2 cloves garlic, crushed3/4 cup raw apple cider vinegar1 six ounce can tomato paste1/4 cup dark molasses1/4 cup light molasses1/4 cup filtered water2 Tbsp orange zest1/2 tsp each: black pepper, ginger, ground mustard1/4 tsp each: allspice, celery seed, dried thyme1/8 tsp cayenne pepper1 small bay leaf1 Tbsp liquid smoke (optional)In a medium saucepan, combine all ingredients except the liquid smoke (if using).Bring to a boil. Reduce heat and simmer gently, uncovered, for 20 minutes, stirring occasionally.Remove from heat. Add liquid smoke. rubberdinghy Posted March 28, 2010 Report Share Posted March 28, 2010 (edited) I've never started a BBQ sauce straight from tomatoes...I usually cheat and start with plain ketchup....(the cheap stuff too)Then...depending on what I'm making it for....Maple syrup, Molasses, Brown Sugar or Honey, for sweetness. One of my faves was a blueberry/maple syrup BBQ sauce.Mustard, apple cider, and apple cider vinegar staples. Smoky...go with the canned chipotles in the adobo.Chunky...sometimes I like to slice onions finely and sautee with garlic...add some tomato chunks.Boozy...Old Sam BBQ sauce was a fave....I think I did that one chunky style...Any dark rum works tooHmmmm, I'm excited now....I don't think I've ever written a sauce recipe down, it's always different, and all depends on what's in the fridge/pantry.
