  8. For sure it has -- the question needs to be: in what manner has it made that impact, to what degree has it made that impact, and of what consequence. The technology of radio impacted music sales as well, to be sure. The ability to tape singles directly off of the radio onto cassette, and later the ability to burn commercial CDs onto blanks, is how we ended up with the private copying levy to compensate for 'lost' sales. I suspect that we all download music and I also suspect that the RIAA overstates its case. So damn hard to figure out what is really happening with so many competing interests. I can think of a number of people who couldn't be bothered to try to figure out how to download music via torrents or file sharing networks but who have stepped up their music consumption - and emptied their wallets - because of the ease of use of itunes and such. I wonder where one meets the other.

  13. Thanks for these, they are very good. A bit of constructive criticism, if I could: ID3 tags, please. And mixing m4a's with mp3's is evil. But thank you! I've discovered some stuff that I wasn't already tuned into.

    Salsa

    I've always wanted to try a fermented salsa, but haven't gotten around to it. I had a recipe bookmarked on the old machine that people raved about, but can't find the exact one. Here's a couple lactofermented ones that I stumbled across via Google though. Haven't made BBQ sauce in years (getting lazy, I guess), but here is my recipe: 2 cloves garlic, crushed 3/4 cup raw apple cider vinegar 1 six ounce can tomato paste 1/4 cup dark molasses 1/4 cup light molasses 1/4 cup filtered water 2 Tbsp orange zest 1/2 tsp each: black pepper, ginger, ground mustard 1/4 tsp each: allspice, celery seed, dried thyme 1/8 tsp cayenne pepper 1 small bay leaf 1 Tbsp liquid smoke (optional) In a medium saucepan, combine all ingredients except the liquid smoke (if using). Bring to a boil. Reduce heat and simmer gently, uncovered, for 20 minutes, stirring occasionally. Remove from heat. Add liquid smoke. Stir. Not sure how long this keeps in the fridge, but I've never had it go bad on me. *shrug*
