OK- enough of this vegetarian bullshit. Fall is really all about braised meat. And red wine. And meat braised in red wine. I'm talking about beef short ribs cooked for hours. Hearty stews. Lamb shanks cooked until they fall off the bone. Serve that shit up with some kinda tasty mashed up starch and I am a satisfied dude. Well, I guess that is later fall. Right now- I'm eating tomatoes all day every day. Caprese salads, BLTs, tomato sauce. I came across a recipe for Fresh corn and tomato salad . I'm loving the bright veggies this time of year. It's really more summer eating then fall. Give it another month for the root veggies and squash recipes.

I haven't heard the show yet, but that pedal has been in constant use all summer. Trey has just figured out when to use it and how to use it tastefully. It's not the crutch it was last summer (first leg) but it is still used lots.

I find the Phish shows to be more of a mature crowd for the most part these days. Lots of dudes in their 30-40s looking to kick back for a night or two without their wives and kids. You can still find the sketch, but you can also avoid it. PT is not an accurate representation of the real fans. Internet personas are what they are.

Butter nut squash risotto is really yummy with some sage and lots of parm. Cube up the raw squash and cook it in your stock. Drain and reserve stock. Use the stock in a basic risotto recipe. Add squash in last 5 min of cooking risotto. Finish with some finely sliced sage, a couple table spoons of butter and a bit of hot chile flakes. Serve with tons of parm.

I'm finally getting around to listening. Night 2 set 2 is the best set of Phish that I have heard in a damn long time!! The end of Light>DWD (reprise?) is sick!!! Great run of shows.

I would prefer Miami. If I'm going to drop more then 2 bills on a hotel I would prefer a roof top pool over a cramped boutique room in the city. But, NYC is fun any time, let alone on NYE!

How did you guys do in the Colorado contest? You had a great story! Ps. Congrats and as usual, I'm jealous!
