When it comes to pork, you should buy organic...its really expensive...but I think worth it. Farmers administer some pretty toxic hormones and anti-biotics to pigs. Some quite toxic to humans. It's law that they stop the injections at least 3 months prior to slaughter, but most do not follow this law.

Well, I wont ever be eating pork again...not after talking to my boss about the environmental issues surrounding pork farms, the contaminants in pork meat and the way pigs are treated on farms. (She had a case that went to trial relating to pig farms...fun research that was.) Anyways, I tried making seitan and it didn't work out well. TVP is a pretty good substitute for certain meats. They sell it at Herb and Spice.

If you want to make it, you can get gluten at Herb and Spice. To buy it...I can look into it for you. If you are going to make it, let me know and I can give you some info, it's difficult. I like tempeh much much better.

Not worried. I've been to Mexico a few times but never in Cancun. I have relatives in Puerto Vallarta. I realize that murders can happen to anyone, but I have seen the way tourists act in Mexico and it's sad. It's the difference between a traveler and a tourist, travelers want to experience a different way of life while tourists want the comforts of home.

I only know older people who have crossed and they've never had problems. I wondered if they would give younger people more trouble.

Has anyone ever crossed into Mexico from the States? Any problems? How long did it take?

Tofu Jerk Ingredients 1 lb Extra Firm tofu, pressed for at least an hour* For the marinade: 1/2 large white onion, roughly choppped 4 cloves garlic 2 tablespoons fresh ginger, grated juice of 2 limes zest of 1 lime 2 tablespoons soy sauce 2 tablespoons olive oil 3 tablespoons pure maple syrup 2 tablespoons olive oil 1 tablespoon dried thyme 2 teaspoons allspice 1/2 teaspoon cayenne 1 teaspoon nutmeg 1/2 teaspoon cinnamon 2 jalapeno peppers, seeded and chopped (or one if you don't want it too spicy) Directions Puree all ingredients for the marinade. Slice the pressed tofu into long triangles like this: Slice into eigths width-wise Slice each eigth in half into a long triangle Marinade tofu in a bowl for an hour covered adjusting slices once. Prepare the skillet with a thin coat of olive oil and turn heat to medium high. When pan is hot, lay tofu in a sigle layer. Cook for 8-12 minutes on each side. Add some extra sauce while cooking if needed. Serve! *To press tofu, wrap in paper towels or a clean dish towel and press under the weight of a heavy object, such as a skillet with a heavy book in it. Turn over after 1/2 hour. This will get the water out and allow the tofu to soak up more of the marinade.

Why does watching TV make someone a 'zombie'? There's no crime in being entertained. I'm not talking about watching a little tv here and there....many people turn on the tv to find something to watch. But when you don't have a television, you find other things to do. But the fact is, most people have never lived without a television and do not understand how it changes a home...like Captain said, your living rooms center is the television. I like watching people watch tv...and they do look like zombies, especially if there are 4-5 people watching together. I watch movies...and I have rented television programs on dvd...I'm not removed.

I don't love cell phones, I do like to text my sisters, I miss them. I hate television more. Wasting hours and hours every week staring at the television like a zombie. Everyone should go at least a month without each year without a television...most would probably never go back.

It's never bothered me...I've never noticed.
