perfect for a fall day! easy, yummy butternut squash soup recipe: 2 Tbsp butter 2 small onions, finely chopped 1 lb butternut squash, peeled and cubed (about half of a large squash) 5 cups chicken stock 2 smallish potatoes, cubed (225 g.) 1 tsp paprika 1/2 cup whipping cream (optional) chopped fresh chives or whole chives to garnish (optional) Melt the butter in the pot and cook the onions for 5 min. until soft. Add the squash, stock, potatoes and paprika. Bring to a boil. Reduce heat to low, cover, and simmer for about 35 min. Pour the soup into a blender or food processor and puree until smooth. Return to the pot and add the cream. Season with salt and pepper. Reheat gently. Stir in chives just before serving, garnish with a few whole chives.
